This cod recipe is another great 30 minute meal - one pot wonder! And of course Italian… Italian recipes and Paleo recipes are the best!!
Slice each roma tomato.
Heat large sauté pan over medium heat then add olive oil. Add in onion for 1 minute then add garlic and sauté until fragrant, about 2 minutes. Add tomatoes; cook and stir until tomatoes begin reduce, 5-7 minutes. Pour in wine and chicken broth; cook over medium heat until liquid reduces slightly, about 5 minutes. Season with salt, black pepper and italian seasonings.
Place cod fillets into mixture; cover and let cook for 5 minutes. Turn cod and cook other side until fish flakes easily with a fork, about 3 to 5 minutes.
Add in olives capers to pan 1 minute before serving.
Tip: If you don't have Italian Seasonings at home! Make it yourself and keep in a sealed container!
Directions for Italian Seasoning:
Combine all ingredients together. Store in a sealed container.
