Cod with tomatoes and wine

This cod recipe is another great 30 minute meal - one pot wonder! And of course Italian… Italian recipes and Paleo recipes are the best!!

Ingredients

  • 3 roma tomatoes
  • 1 tablespoon olive oil or coconut oil
  • 1 small shallot, finely chopped (about 3 tablespoons)
  • 2 cloves garlic, chopped
  • 1/2 cup dry white wine
  • 1/4 cup low sodium chicken broth
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground pepper
  • 2 teaspoons dried Italian seasonings
  • 4 (4 ounce) cod fillet
  • 5-6 green olives, sliced
  • 2 teaspoons capers, drained
  • Italian Seasoning Ingredients
  • 2 teaspoons dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme leaves

Directions

  1. Slice each roma tomato.

  2. Heat large sauté pan over medium heat then add olive oil. Add in onion for 1 minute then add garlic and sauté until fragrant, about 2 minutes. Add tomatoes; cook and stir until tomatoes begin reduce, 5-7 minutes. Pour in wine and chicken broth; cook over medium heat until liquid reduces slightly, about 5 minutes. Season with salt, black pepper and italian seasonings.

  3. Place cod fillets into mixture; cover and let cook for 5 minutes. Turn cod and cook other side until fish flakes easily with a fork, about 3 to 5 minutes.

  4. Add in olives capers to pan 1 minute before serving.

    Tip: If you don't have Italian Seasonings at home! Make it yourself and keep in a sealed container!

     

  5. Directions for Italian Seasoning:

    Combine all ingredients together. Store in a sealed container.
