Cod Florentine

This recipe is not only delicious, but beautiful to the eye! Italians do eat with their eyes but if it looks beautiful, we know it will taste wonderful! You can use cod, haddock, flounder, or any other white flaky fish for this recipe. I just love the spinach, garlic, and combination of herbs to make this a perfect dinner!

Ingredients

  • 4 (7 ounce) cod fillets
  • 1 teaspoon sea salt plus more
  • 3/4 teaspoon freshly ground pepper plus more
  • 2 tablespoons coconut oil, unsalted butter or olive oil
  • 2 tablespoons fresh lemon juice, divided
  • 1 lemon, sliced
  • 1 bag baby spinach
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1/2 teaspoon red pepper flakes, optional
  • extra virgin olive oil

Directions

  1. Preheat oven to 325 F

  2. Take the cod fillets and set on a platter, then season both sides with salt and pepper.

  3. In a large oven-safe saute pan over medium heat, add in oil or butter. 

    Once melted and hot, add in cod and let cook for about 3 minutes then flip over and drizzle with lemon juice and add sliced lemons in the pan.

  4. In a large bowl, combine spinach, garlic, basil, parsley, red pepper flakes, 1/2 teaspoon sea salt and 1/2 teaspoon freshly ground pepper.

  5. Top spinach mixture over the cod and place in the oven for 7-10 minutes.

  6. Before serving drizzle with a little extra virgin olive oil.
