Great make-ahead appetizer for you next dinner party!
Preheat oven to 350 degrees F.
Take mushrooms and gently wipe with a clean kitchen towel or paper towel. Remove and chop stems and set aside. Take caps and set on a clean work board.
In a large sauté pan over medium high heat add one tablespoon of olive oil. Add in chorizo and cook for about 10 minutes. Break apart while cooking with a wooden spoon. Use a slotted spoon and place in a bowl.
Using the fat n the pan add in onions, peppers, and chopped mushrooms. Sauté until the mushrooms have browned, stirring frequently, about 5-7 minutes. Add 1/2 teaspoon salt and pepper. Add to the bowl with the sausage.
Using a chopper or food processor add mixture and pulse a few times. You just want to finely chop the ingredients. Add back in the bowl. Mix in cheese.
Place mushroom caps on a parchment paper lined baking sheet and divide mixture to fill each cap. Drizzle a little olive oil and bake for 10-12 minutes.
Top with fresh herbs!
