Chopped Kale and Vegetable Salad with Red Wine Vinaigrette

Perfect spring salad to enjoy.

You can either pick up a bunch of kale and chop or baby kale.  You pice!

Go to Shop Rite and check out their produce department. Local fruits and vegetables and organic selections.

Add other fresh or grilled vegetables you enjoy in the spring/summer

Ingredients

  • 4 cups fresh kale, chopped
  • 1 red bell pepper, thinly sliced
  • 3 plum tomatoes, chopped
  • 1/2 cup cucumber, chopped
  • 4 cups kale, chopped
  • 1/2 cup mushrooms, thinly sliced
  • ----------------------------------------
  • 1 tablespoon shallot, finely diced
  • 2 teaspoons Dijon mustard
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
  • 3/4 cup extra-virgin olive oil

Directions

  1. Add all of the salad ingredients in a large platter or salad bowl.

  2. In a bowl add shallots, Dijon mustard and whisk together.  Add in red wine vinegar, salt and pepper while whisking.  Continue whisking while slowly adding in olive oil.  Drizzle over salad and enjoy!
