I found 3 very large zucchini in one of my gardens and decided what a great way to make chocolate zucchini bread. When I shredded the zucchini the seeds were extremely large so I did not use them but there was plenty of zucchini to make 2 breads.
This is not a Paleo recipe but I do have one here which is very good so either one is a great zucchini bread to enjoy! Paleo Zucchini Bread
Preheat oven to 350 degrees. Prepare a loaf pan by coating spray or brushing with melted butter or oil.
In a large bowl add sugar, oil, eggs, banana and vanilla. Whisk until smooth (about 5 minutes).
In another large bowl with a sifter over the top add in flour, cocoa, baking soda, baking powder, salt and cinnamon and shake the sifter until all of the ingredients are in the bowl. Using a wooden spoon or spatula stir together.
Gradually add dry ingredients to the wet batter and combine using your wooden spoon or spatula. Then add in zucchini and stir well.
Pour into your prepared loaf pan and bake for 50-55 minutes (until a toothpick comes out clean).
Let cool for 10 minutes then remove to a rack for 10 minutes. Slice and enjoy warm!
