Chocolate Protein and Espresso Chia Pudding

I just LOVE chia seeds and making pudding.  Together this is a perfect Paleo snack anytime! Just shake it all in your jar, cover, refrigerate overnight and enjoy!  I love to add a spoonful of almond butter on top.  Go ahead and try it!


  • 1 cup almond milk, original
  • 5 tablespoons chia seeds
  • 1 scoop chocolate protein
  • 1 tablespoon cocoa powder, unsweetened
  • 1 tablespoon local honey
  • 1 teaspoon espresso powder, optional


  1. Add all ingredients to a jar, cover and shake, shake, shake while singing to your favorite song.  Me that would be a Bon Jovi song!  Anyway ...


  2. Keep covered and refrigerate overnight.  Enjoy as is or with your favorite topping such as; coconut milk whipped cream, shaved chocolate, almond butter, fruit, so on and so forth!
