When my granddaughter is over visiting she always wants to make pancakes! Let's make these delicious chocolate pancakes for Father's Day and there will plenty of smiles at the table!! I am even adding a chocolate drizzle to make this breakfast extra chocolate!!
If you want a gluten free option for these pancakes follow directions on the package of Moon Rabbit Pancake and Waffle Mix then add in cocoa, vanilla, cinnamon, chocolate chips and enjoy!!
Preheat oven to 150 degrees. Take a baking sheet and line with parchment paper and keep in the oven. As you make the pancakes you can place in the oven to keep warm!
In a large bowl sift the dry ingredients; flour, cocoa, baking soda and salt. Mix together using a spatula.
Add in vanilla and cinnamon then whisk in buttermilk and melted butter (cooled).
In a small bowl whisk eggs then add them into the mixture and combine well. Add in chocolate chips if you decide!
Heat your griddle pan to a medium/high heat. Once hot add butter or spray to coat pan.
Add an ice cream scoop or 1/4 measured cup for each pancake on the hot griddle. Wait until bubbles start around the outside of the pancake then flip over. About 2-3 minutes per side!
Place chocolate in a glass microwave safe dish. Microwave for 30 seconds remove from microwave and stir in shortening until all is melted.
Drizzle over pancakes before serving.
