I love cannoli's! Let's just start there. I remember when I was little my Nana and I would spoon out all of the ricotta filling from the shell of the cannoli and would laugh like little kids. I really miss her especially around the holidays. I just hope I am as good as a grandmother as she was to me!
I came up with these cookies as it has the ingredients as a cannoli but in the form of a cookie.

Heat oven to 350°F. Line 2 large baking sheets with parchment.
In a medium bowl sift flour, baking soda, baking powder and salt. Whisk together to incorporate.
In another bowl using your hand mixer beat the butter and ricotta on medium-high speed until light and fluffy. Add the sugar, orange zest, and vanilla and continue mixing with the blender. Add in egg and beat until incorporated.
Store at room temperature or freeze in an airtight container. Thaw to enjoy!
