Chicken Scallopini in Lemon- Caper Sauce

A simple dish can be the perfect romantic dinner for 2 or a quick dish for a family dinner.  Many Italian dishes are very simple yet extremely flavorful. 

Ingredients

  • 1 pound chicken scallopini
  • 1 1/2 teaspoon sea salt
  • 1 teaspoon freshly ground pepper
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter or ghee
  • 2 cloves garlic, minced
  • 1 tablespoon capers, drained
  • 1/2 cup dry white wine
  • 1 cup low sodium chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice

Directions

  1. On a poultry safe board season the chicken with salt and pepper.

  2. Heat a large sauté pan over medium heat. Once hot add in 1 tablespoon of oil and butter/ghee.

  3. Once the butter is melted in batches add in chicken and sauté each side for 2-3 minutes. Set aside on a plate tented with foil during each batch. Add in more oil/butter if needed for each batch.

  4. Once all of the chicken is cooked and out of the pan on medium heat add in garlic then all of the chicken and capers

  5. Pour in wine, broth and let simmer for 3-5 minutes, as it will reduce.

  6. Top with fresh parsley and lemon juice and enjoy!

    Cindy’s Tip: You can use thinly sliced chicken breasts if you cannot find scallopini. Also, be sure the pan is hot when cooking the chicken to get a nice brown sear.  I like the combination of oil and butter to achieve nice brown tasty chicken without dredging in flour.
