I love chicken cacciatore and thought combining the flavors but using chicken breast and tossing with the black bean pasta would be the perfect combination to enjoy for dinner!
Cook pasta in large pot of boiling salted water until for 6 minutes. Drain and rinse with cold water.
In a large sauté pan over medium heat add in olive oil.
Season chicken with sea salt and pepper. Add to the pan and cook for about 7 minutes browning all sides
Add in red pepper, onion and mushrooms and cook for about 6 minutes. Add in garlic and cook for 30 seconds then add in marinara sauce, broth, basil, parsley and red pepper flakes.
Bring to a high simmer then taste for any additional salt, pepper or other seasonings. Toss in black bean pasta than transfer to a bowl or large platter!
