Chicken Cacciatore and Black Bean Pasta

I love chicken cacciatore and thought combining the flavors but using chicken breast and tossing with the black bean pasta would be the perfect combination to enjoy for dinner!

  • 1 package black bean pasta
  • 2 tablespoon olive oil
  • 2 chicken boneless breasts, chopped
  • 1 teaspoon sea salt, plus more
  • 1/2 teaspoon freshly ground pepper, plus more
  • 1 red bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 1 cup bella mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 cup low sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/4 teaspoon red pepper flakes

  1. Cook pasta in large pot of boiling salted water until for 6 minutes. Drain and rinse with cold water.

  2. In a large sauté pan over medium heat add in olive oil.

  3. Season chicken with sea salt and pepper.  Add to the pan and cook for about 7 minutes browning all sides

  4. Add in red pepper, onion and mushrooms and cook for about 6 minutes.  Add in garlic and cook for 30 seconds then add in marinara sauce, broth, basil, parsley and red pepper flakes.

  5. Bring to a high simmer then taste for any additional salt, pepper or other seasonings.  Toss in black bean pasta  than transfer to a bowl or large platter!
