Chicken Cacciatore

Letting this chicken recipes simmer in the slow cooker all day creates the most amazing meal. This Italian recipe is very popular and an easy recipe. Just add all of the ingredients in the slow cooker, set to low, off to work! Dinner is ready when you get home. Just pick up the Italian bread on your way home for dipping! Just omit the bread or pasta to make this a paleo recipe!

 

Ingredients

  • 4 chicken thighs
  • 2 chicken breasts with skin and backbone, halved crosswise
  • 2 teaspoons sea salt, plus more to taste
  • 1 teaspoon freshly ground black pepper, plus more to taste
  • 3 tablespoons olive oil
  • 1 large red bell pepper, chopped
  • 1 large green or orange bell pepper, chopped
  • 1 small yellow onion, chopped
  • 1 package of your favorite mushrooms, sliced
  • 3-4 garlic cloves, finely chopped
  • 1 (28-ounce) can diced or crushed tomatoes with juice
  • 1 cup reduced-sodium chicken broth
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoons dried basil
  • 1 teaspoon of dried parsley
  • 3 tablespoons drained capers

Directions

  1. Season the chicken pieces with 1 teaspoon of each salt and pepper.

  2. Add chicken to your slow cooker.

  3. Add the remainder of ingredients (except for the capers) in the slow cooker and set to low for 6-7 hours.

  4. 30 minutes before serving add in the capers or add them to the serving platter.
