Cauliflower Mash

Looking for a Paleo Recipe this Thanksgiving to substitute mashed potatoes? Here is my Cauliflower Mash recipe! For my Italian friends – You can still make your potato pancakes with the Cauliflower Mash! Just as yummy….

Ingredients

  • 1 head cauliflower, washed, and cut into florets
  • 2 teaspoons sea salt, divided
  • 2 teaspoons freshly ground pepper, divided
  • 1 small sweet onion, chopped (1/2 cup)
  • 3 cloves garlic, minced
  • 1 tablespoon Rosemary, fresh, chopped
  • 1 tablespoon Thyme, fresh, chopped
  • 3 tablespoons unsalted butter, room temperature

Directions

  1. Place cauliflower in a steamer basket in a large soup pot, season with 1 teaspoon of salt and pepper. Steam until soft (about 10–12 minutes).

  2. Heat 1 tablespoon of butter in a medium sauté pan over medium heat.

  3. Sauté onion, garlic, and herbs for 3 minutes.

  4. Season with remaining salt and pepper.

  5. Remove from heat.

  6. Place steamed cauliflower into your food processor.

  7. Add the sautéed onion, garlic, and herbs, along with remaining 2 tablespoons of butter.

  8. Process until smooth.

  9. Garnish with fresh herbs.

    Note: You can add red pepper flakes to give a little heat. You can also substitute low sodium chicken broth for the butter. This can be prepared a day in advance and refrigerated. Just warm before serving!
