Brooke's Paleo Vanilla Donuts with Chocolate Frosting

I love spending time with Brooke and we are creating memories similar to my Nana.  We love being in the kitchen together and earlier for dinner we made a sauce and chicken parmesan.  Brooke was so adorable tasting the sauce then looked at me and said - Just a little more salt.  Priceless!

Then she found my donut pan and wanted to make these yummy donuts.  I am so blessed to have Brooke in my life and I enjoy every minute.

About this recipe: Brooke and I wrote down every step as we created these donuts and had so much fun.  Then she topped a few with sprinkles (non-paleo but 8 year old approved)

 

Ingredients

  • Coconut oil, melted for brushing tin
  • 1/4 cup coconut flour
  • 1/2 cup tapioca flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup coconut sugar
  • 4 large eggs, at room temperature
  • 1/2 cup coconut milk, full fat (canned)
  • 1 tablespoon butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 2 tablespoons coconut oil

Directions

  1. Preheat oven to 375 degrees F.

  2. Brush melted coconut oil in donut tins.

  3. In a bowl, combine coconut flour, tapioca flour, baking powder, salt and coconut sugar. 

  4. In another bowl whisk eggs then add in coconut milk, butter and vanilla to combine.

  5. Add wet into dry and combine.

  6. Divide batter into your donut tin pan.  (You can add the batter into a plastic bag and pipe into each donut tin as well)

  7. Bake for 8-10 minutes.

  8. Remove from oven and allow to cool on a baking rack while you prepare the frosting.

  9. In a microwave safe bowl add in chocolate chips and coconut oil.  Microwave for 30 seconds then stir until melted and if needed microwave in increments of 20 seconds.

  10. Immediately dip donut in the chocolate frosting, allow to cool and set. Enjoy!
