Blueberry Chocolate Protein Balls

I just love no-cook treats and these Blueberry Chocolate Protein Balls are the perfect anytime go-to and best of all they are Paleo and Gluten Free.

If you don't have fresh or frozen blueberries the dried ones work well too.  Also, if you only have the large blueberries then put them in the blender for a few pulses as well.

  • 6 dates, pitted
  • 1/2 cup almonds
  • 1/2 cup pecans
  • 1/4 cup roasted unsalted macadamia nuts
  • 1 tablespoon vanilla protein
  • 2 tablespoons of coconut oil, melted
  • 1/2 cup fresh Maine blueberries (small)
  • 1/2 cup mini-chocolate chips
  • 3/4 cup unsweetened shredded coconut

  1. Put dates in your blender or food process and mix until it almost forms a ball.

  2. Add in almonds, pecans, macadamia nuts, protein, and coconut oil and pulsed until combined well.

  3. Put mixture into a bowl.  Add blueberries and mini chocolate chips.

  4. Spread out shredded coconut on a plate.

  5. Form into balls then roll in the shredded coconut.

  6. Refrigerate to store and share with your friends.

I am really enjoying my Ninja blender!
