Blackened Seared Yellow Tail Snapper with Sautéed Vegetables

In Florida we can get some amazing fresh fish.  While at the market I spotted Yellow Tail Snapper wild caught and local.  I had all of the other ingredients to make this amazing dinner for 2.  This is a great dinner if you are following the Paleo diet or a healthy Mediterranean diet

Note:  You don't have to buy blackened seasonings as I am sure all of the spices are at home in your cabinet.  

Julienne is a knife cut where you slice long strips and keep them all in the same length. 

 

 

Ingredients

  • 2 pounds yellow tail snapper
  • Kosher salt
  • Freshly ground black pepper
  • 2 teaspoons blackening seasonings (recipe below)
  • 1 zucchini, julienne
  • Extra-virgin olive oil
  • 1 red bell pepper, julienne
  • 2 carrots, julienne
  • 1/4 cup thinly sliced red onion
  • 1-2 cloves garlic, minced or chopped
  • 1 tablespoon butter

Directions

  1. Take the snapper and lay on a clean work board service.  Lightly season with salt and pepper. To blackened season just sprinkle paprika to lightly cover all of the fish.  Then lightly season with garlic powder, onion powder, cayenne pepper, basil and oregano. Let sit.

  2. In a large sauté pan over medium heat add in 2 tablespoon of oil.  Once the oil is hot add in vegetables and garlic.  Season with 1 teaspoon of salt, 1/2 teaspoon of pepper, 1/2 teaspoon of basil and oregano.  (add cayenne if you desire).  Cook for about 10 minutes.  Set aside and cover the pan wit foil.

  3. Take another large sauté pan over medium high heat and add in 1 tablespoon of oil and the butter.  Once the butter is melted and begins to bubble add fish in skin side down.  Let cook for 3 minutes.  flip over and cook the other side for 3 minutes.  

  4. To serve add a heaping of the vegetables in the middle of the plate then top with a piece of snapper skin side down.  Drizzle with a little EVOO and any fresh or dried herbs.  Enjoy!

    PS - I had fresh basil therefore I added to the vegetables when they were done and tossed around in the pan and also garnished my dishes!
