Better Butter Tilapia

I was watching a video on better butter chicken and thought it would be a great way to try this on my granddaughter.  She is picky with seafood but loves chicken.  This paleo seafood dish was a hit and tilapia is so mild I think she thought it was chicken!  A healthy fake-out!

Ingredients

  • 1 pound tilapia fillets (4 pieces)
  • 1/4 cup olive oil
  • 1/4 cup red onion, diced
  • 1 clove garlic, minced
  • 1/2 teaspoon dried cardamon
  • 1/2 teaspoon dried coriander
  • 1/4 teaspoon chili powder
  • 2 celery leaves, chopped
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 cup canned coconut milk, full fat
  • 2 tablespoons tomato paste
  • 3 tablespoons unsalted butter

Directions

  1. Cut each fillet into 3 pieces; set aside.

  2. In a large pan (braising or sauté pan) over medium heat add in oil.  Once hot add in onion and garlic; let cook for 2 minutes.

  3. Reduce to medium-low then add in cardamon, coriander, chili powder, celery leaves, salt and pepper.  Stir using a wooden spoon and let cook for 1 minute.

  4. Add in coconut milk and tomato paste.  Use the back of the wooden spoon to smooth paste into the mixture.  Increase to medium heat.

  5. Place tilapia pieces into the pan; cover and let cook for 12 minutes.  Remove cover and add in the butter to melt and create a nice creamy sauce.  Carefully remove fish from pan and pour over sauce.  Enjoy
