I was watching a video on better butter chicken and thought it would be a great way to try this on my granddaughter. She is picky with seafood but loves chicken. This paleo seafood dish was a hit and tilapia is so mild I think she thought it was chicken! A healthy fake-out!
Cut each fillet into 3 pieces; set aside.
In a large pan (braising or sauté pan) over medium heat add in oil. Once hot add in onion and garlic; let cook for 2 minutes.
Reduce to medium-low then add in cardamon, coriander, chili powder, celery leaves, salt and pepper. Stir using a wooden spoon and let cook for 1 minute.
Add in coconut milk and tomato paste. Use the back of the wooden spoon to smooth paste into the mixture. Increase to medium heat.
Place tilapia pieces into the pan; cover and let cook for 12 minutes. Remove cover and add in the butter to melt and create a nice creamy sauce. Carefully remove fish from pan and pour over sauce. Enjoy
