Best Waffles for Two

I love summer time at the lake because I get to spend it with my grandchildren.  I have Ty (4) all week and this morning he wanted waffles.  He love to cook with me so of course we made them homemade.  The best part for him are the eggs!  I decided to whisk the egg whites to make these waffles even more amazing.  

This batter made 4 perfect waffles in my waffle iron for my 2 sweeties!  




  • 1 1/2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, divided
  • 2 tablespoons maple syrup
  • 1 1/4 cup milk
  • 1 teaspoon vanilla
  • 4 tablespoons unsalted butter, melted


  1. Heat waffle iron.  Add flour, baking powder and salt to a medium mixing bowl.  Use a whisk to incorporate well.

  2. Divide the egg yolks in one bowl and the whites in another.  Whisk the whites until you have soft peaks, set aside.

    (this was a perfect job for my batman Ty) We went to a concert last night and he had his face painted!

  3. Create a well in the center of the flour.  Add egg yolks, maple syrup, milk, vanilla and melted butter  Use a whisk and start from the center of the wet and continue whisking until all of the flour is incorporated into the batter. 

  4. Use a spatula and fold in the egg whites.  

  5. Pour in batter to fit the waffle iron and securely close.  Depending on manufacture follow their directions (about 3 minutes).

  6. Enjoy with maple syrup and fresh fruit!
