Best Pan Seared Pork Chops

These pork chops were simply amazing.  Using my Cast Iron pan was perfect for our dinner.  Get it really hot to sear the chops then the oven will do the rest.  I did let the pork chops marinade for a few hours in the refrigerator seasoned with salt, pepper, fresh rosemary and thyme from my garden then olive oil.  

I made these for 3 of us!  I used the Center Cut Pork Chop Loin but you can use any cut for this recipe.

Ingredients

  • 2-4 pork chops
  • Salt
  • Pepper
  • Fresh rosemary sprigs
  • Fresh thyme
  • Olive oil
  • 2 cloves garlic chopped
  • 2 tablespoons unsalted butter

Directions

  1. Season pork chops with salt and pepper and place in a large bowl or platter.  Top with lots of rosemary and thyme then pour about 3 tablespoons of olive oil.  Use your hands to rub the oil and seasonings all over the pork chops.  Cover and either refrigerate for 2 hours or let sit.

    If you refrigerate then let come to room temperature for 30 minutes before cooking.

  2. Preheat oven to 400 degrees F.

  3. Add oil to your pan then use a pastry brush to spread around the pan evenly while heating the pan pretty hot.  A medium high temperature.

  4. Place pork chops with herbs and oil into the hot pan.  Let sear for 5 minutes (do not touch) then flip over and sear for another 5 minutes.  Add garlic and butter into the pan then place in the oven for 10 minutes.  

  5. Insert a thermometer and the temperature should read 135.  Remove from oven and let sit for 5 minutes.  Enjoy

  6. I served with gnocchi with a pea and cream sauce!  I also drizzled EVOO over my pork chops while eating.
