Baked Ham and Broccoli Omelet


  • 3/4 cup broccoli, florets
  • 8 large eggs
  • 1 cup milk
  • 1/2 teaspoon sea salt
  • 1/4 cup baked deli ham, diced
  • 1/2 cup shredded Cheddar cheese
  • 1/4 cup shredded mozzarella cheese


  1. Preheat oven to 350 degrees F. Coat one 8x8 inch baking dish with cooking spray and set aside.

  2. In a microwave safe dish add broccoli with 3 tablespoons of water. Set for 2 minutes, set aside.

  3. In a large bowl whisk the eggs, milk and salt. Combine well the ham, broccoli, cheddar cheese and mozzarella cheese. Pour into prepared casserole dish.

  4. Bake uncovered for 35 to 40 minutes. When a toothpick comes out dry from the middle
