Bacon Wrapped Salmon

I love salmon!  Wrapping in bacon and dipping in my spicy guacamole was amazing!  




  • 3/4 pound wild salmon
  • 1 lemon, zested
  • 3/4 teaspoon freshly ground pepper, divided
  • Olive oil
  • 8 slices of uncured bacon


  1. Preheat your oven to 400 F.

  2. Cut up salmon into 12 or more small cubes. 

  3. Drizzle lemon juice and a pinch of pepper on each piece of salmon then drizzle with olive oil.

  4. Slice each piece of bacon in half.

  5. Wrap each 1/2 slice with bacon leaving the seal at the bottom of the fish and on the baking sheet (seal side down).

  6. Bake for 10-12 minutes until salmon is medium and bacon is almost crispy. Enjoy with my spicy avocado guacamole!
