Bacon wrapped Chicken with Sage

  • 4 boneless, skinless chicken breast
  • 1 1/2teaspoon sea salt
  • 1 teaspoon freshly ground pepper
  • 8 sage leaves, plus extra for garnish*
  • 4 slices thick-cut bacon
  • 1 cup low sodium chicken broth
  • 1 arrowroot powder
  • 2 lemons juiced (about 1/4 cup)
  • Olive oil


  1. Preheat oven to 400ºF.

  2. Brush olive oil on a 9×13 baking dish.

  3. Season both sides of chicken with salt and pepper.

  4. Take 2 sage leaves and place on each chicken breast. Wrap a slice of bacon around each piece of chicken then place chicken pieces in baking dish. Bake until chicken is cooked through and your internal thermometer registers 165ºF, about 40 minutes.

  5. Transfer chicken to a platter and tent with foil to keep warm. In a small sauce pan over medium-high heat add in chicken broth them whisk in arrowroot powder until it become thick, 1 minute. Whisk lemon juice and bring to a boil. Reduce heat to medium, whisking constantly, until sauce is smooth and thickened, about 2 minutes. Remove from heat. Whisk any juices that have accumulated on platter into sauce. Pour sauce over chicken and serve.

    Note: If you are entertaining and want this dish to turn from everyday to gourmet. Heat a medium saute pan over medium-high heat and coat the bottom with oil. Drop in sage leaves one at time for 1 minute. They fry up to crispy and delicious garnish!
