Bacon Wrapped Chicken with a Side Salad

Chicken wrapped with Bacon makes a great Paleo dinner!  


  • 4 boneless breast chicken
  • 8 pieces bacon
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 2/3 teaspoon freshly ground pepper
  • 1/4 cup chicken broth
  • Mixed salad greens
  • Cherry tomatoes
  • Your favorite vinaigrette (recipe below)
  • Vinaigrette Ingredients:
  • 1/2 shallot, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon minced fresh garlic
  • 3 tablespoons red wine vinegar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
  • 1/2 cup Olive Oil


  1. Preheat oven to 425 degrees F. Prepare your chicken breasts, cut off all fat and wash chicken thoroughly.

  2. In a small bowl combine all of the seasonings, salt and pepper.

  3. Take an oven proof baking sheet or dish. Place chicken breast in baking dish. Season breasts on both side with the seasonings.

  4. Take 2 slices of bacon for each breast and wrap around chicken. Tie the bacon together facing up.

  5. Pour chicken broth over the chicken and coat the bottom of the pan.

  6. Bake for about an 1 hour until chicken is done.

  7. Take chicken breasts out and serve with your prepared salad or any other side dish.

  8. Directions for Vinaigrette: 

    In a small bowl, whisk together the shallot, mustard, garlic, vinegar, salt and pepper. While whisking, slowly add the olive oil until the vinaigrette is emulsified. Pour over your salad.
