Bacon Wrap Breakfast Sandwich

Don't we all LOVE bacon??  Of course we do..  How about a breakfast sandwich wrapped with bacon.  I am not even sure what inspired me to make this but it all started as I was laying out the bacon on a baking sheet for breakfast and this is what happened!

  • 3-4 slices bacon, sliced in half
  • 2 eggs, whisked and scrambled
  • 1/2 avocado sliced
  • Any other wrap fillings
  • Salsa or Sriracha


  1. Preheat oven to 400 degrees F.  Line baking sheet with parchment paper.  Take sliced bacon and weave to create a wrap.  Add toothpicks to secure the bacon weaves together.  (this will help when you roll your sandwich).  Bake for 14 minutes.

  2. Carefully pat with a paper towel to absorb any fat.  Let sit for about 5 minutes then remove the toothpicks.

  3. Top with your cooked scrambled eggs, avocado and any other toppings you desire.

  4. Roll into a wrap and place on your plate.  Top with salsa or sriracha and enjoy!
