Baby Kale and Pea Pesto

I am known for opening the refrigerator and creating a quick and healthy dish.  I was looking at baby kale and 2 pieces of bone-in chicken breast along with zucchini, eggplant and red onions.  I decided to make a pesto!  Go ahead and give this one a try!

 

Ingredients

  • 2 cups baby kale
  • 1 cup frozen peas, completely thawed
  • 1/4 cup raw walnuts, chopped
  • 1/2 cup fresh parsley
  • 1 clove garlic, peeled
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 lemon juiced
  • 1 teaspoon Italian seasonings
  • 1/8 teaspoon red pepper flakes
  • 1/2 cup grated romano cheese
  • 2/3 cup or more extra virgin olive oil.

Directions

  1. Take out your food processor and add in the kale, thawed peas, walnuts, parsley, garlic, salt, pepper, lemon juice, Italian seasonings, red pepper flakes and romano cheese.  Cover the processor and put on low then drizzle in the extra virgin olive oil  slowly.

     

     

      

  2. I cooked up my 2 chicken breast with salt, pepper and just a little olive oil then grilled up zucchini, eggplant and red onions.  Drizzled the pesto over the chicken then added a little more extra virgin olive oil in the pesto and tossed it with the vegetables.  Perfect dinner..  Enjoy
