Artichoke and Spinach Balls

I love keeping frozen vegetables handy in the refrigerator.  We were invited to a friends house and came up with these to bring.  I had all of the ingredients.  Enjoy!

PS - I made these, packed them up and they vanished.  I totally forgot to take a photo of the finished balls.  New time...  

 

Ingredients

  • 1 tablespoon olive oil or coconut oil
  • 1 (10 ounce) frozen box of spinach, thawed
  • 1 (10 ounce) frozen box of artichokes, thawed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1 shallot, chopped (about 1 tablespoon)
  • 1 clove garlic, chopped
  • 2 large eggs
  • 2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes, optional
  • 1/2 cup tapioca flour
  • 1/4 cup almond flour

Directions

  1. Preheat oven to 400 degrees F.  Line a baking sheet with parchment paper.

  2. Wrap spinach with a paper towel and squeeze out water.  Heat a large sauté pan over medium heat.  Add in oil and let pan get hot.

  3. Add in spinach and artichoke and season with salt/pepper.  Let cook for about 3-4 minutes.  Add in shallots and garlic while continuing to cook for another 5 minutes.

     

  4. Put spinach and artichoke mixture in the food processor and pulse until it's all broken down into small pieces.  Then add in eggs and pulse a few more times.  Place in a bowl.

  5. Add in Italian seasoning, red pepper flakes, tapioca flour and almond meal.  Combine into the mixture.  Use an ice cream scoop and form a ball then place on the parchment paper.  

  6. Bake for about 12-15 minutes or until golden brown.  Serve immediately.
