Oats and Nuts Amaranth Cookies

I am enjoying creating recipes using amaranth and these cookies are the perfect afternoon treat!



  • 1 1/2 cups oats, old fashioned
  • 1/2 cup amaranth (uncooked)
  • 1/4 teaspoon sea salt
  • 1/4 cup almonds, roughly chopped
  • 1/4 cup macadamia nuts, roughly chopped
  • 1/4 cup dried cranberries
  • 3 tablespoons unsweetened coconut flakes
  • 1/4 cup organic raw honey
  • 2 egg whites


  1. Preheat oven to 350 degrees.

  2. In a mixing bowl combine oats, amaranth, salt, almonds, macadamia nuts,  dried cranberries and coconut together using a spoon.

  3. Add in honey and egg whites then combine into the mixture. Stir mixture until well incorporated.

  4. Line you baking sheet with parchment paper. Spoon a heaping tablespoon of mixture onto the baking sheet then firmly press together using your hands and form a cookies. You will get 12 cookies from this batch.

  5. Bake for 17-18 minutes or until golden brown.
