Amaranth Fruit and Nut Butter Smoothie

Since I have learned about Amaranth and the benefits we have been using in many recipes including our smoothies. 

I love using my Ninja blender!  I will be making this smoothie on Better Connecticut, Thursday, February 26th (my son Steven's birthday) and one lucky audience guest will be going home with one!  How exciting is that..   I just love giveaways...

  • 1 cup amaranth
  • 1 teaspoon flax seeds
  • 1 ripe banana
  • 1/2 cup blueberries
  • 1 heaping tablespoon nut butter
  • 1 cup almond milk (or coconut milk)
  • 1 teaspoon cinnamon
  • Ice


  1. Add 1 1/2 cup of water to a sauce pan add the amaranth and flaxseeds.  Bring to a boil then simmer for about 20 minutes. Keep an eye on it as the water will absorb into the amaranth.

  2. Add amaranth and remaining ingredients into your blender with about 4 pieces of ice.  Blend until smooth and enjoy!
