There is just something about homemade cornbread that makes everyone happy. We smoked a pork shoulder for Superbowl Sunday and I thought having some cornbread biscuits would be a great addition to the rolls.
I just love Bob's Mill Paleo Baking Mix and it worked great with this recipe.
Also, I don't buy buttermilk and it's so easy to make at home. This is all you do!
Preheat oven to 400 degrees F. Lay parchment paper on a baking sheet pan.
In a mixing bowl whisk together paleo baking flour, cornmeal, baking powder, baking soda, salt and coconut crystals.
Either use your fingers or a pastry cutter to combine the butter into the dry mixture. You want it to hold together but there may still be small chunks of butter.
Add in buttermilk then work with your hands to create a mixture that will hold well together.
Add a little of the Paleo Baking Flour or any other Flour you have handy to the prepared baking sheet pan. Use a large ice cream scoop to evenly create a biscuit. Put on the baking sheet then use the back of the scoop to lightly even out into your desired shape.
Use some of the remaining buttermilk (if you made the 1 cup) and brush on the top of each biscuit. Bake for about 11-12 minutes; until golden.
Enjoy warm or put in a sealable bag until ready to use. Enjoy xo
