Almond Meal Waffles

You can be very creative with these waffles. I like toasting some chopped pecans and adding to the mixture. Adding fresh blueberries give the waffles an extra burst of flavor! A great way to start any day.



  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 4 eggs
  • 1/4 cup of honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/4 cup pecans or walnuts, chopped
  • cooking spray
  • special equipment- waffle iron


  1. Preheat waffle iron

  2. In a small sauté pan over low heat add your pecans and walnuts. Toast lightly then remove from heat.

  3. Combine almond flour, salt, and baking soda in a large bowl.

  4. In a separate bowl, whisk together the eggs, honey, and vanilla.

  5. Stir the flour mixture into the egg mixture. Grease preheated waffle iron with cooking spray.

  6. Spoon batter onto hot waffle iron. Cook until golden; serve hot.
