I just love pad thai but when eating out its very high in sodium and that discourages me to order this dish.

I sometimes make it myself and since I had a container full of bean sprouts it seemed like a perfect lunch!

If you are looking for a paleo version then check out this recipe using zucchini. It's really good as well but today I felt like mixing it up a bit.

I make some sort of "cutlets" a few times a week.  Sometimes I call it "Milanese" because it sounds sexy! Tonight I wanted to make something with sweet potatoes on the side and came up with this recipe.  The apple really adds an extra layer of flavor.

I just love Cauliflower and will eat it any way possible.  I have been following a more vegetarian diet and am really enjoying the new recipes.  

You can take a head of Cauliflower and either grate with a box grater or using the shredding disk in your food processor.  What did I do for this recipe.....  I picked up a frozen bag of riced cauliflower.  Made this dish a little quicker and less mess.  So you decide...  Enjoy xo Cindy

I used my herb marinade and dressing to add amazing flavor to these boats!

I made this dish as one of the recipes for a charity event to benefit Place of Hope. We received amazing vegetables as donations and I thought this dish would be perfect.  I wish we grabbed a photo of my friend Suhiel spiralizing an entire box of zucchini!  

You can add poultry or seafood to make this dish hearty or enjoy as is for a perfect side dish or vegetarian option.
