I was at our local fish store to pick up salmon but spotted perfect Ahi Tuna. I came home and mixed together the perfect seasonings. My husband wanted a little pasta so I pulled out a 1/2 red pepper, 1/2 container mini-roma tomatoes and a zucchini. This was a great dinner for my hubby and I.

If you are following a Paleo or Gluten Free Pasta you can substitute pasta for spaghetti squash, gluten free pasta or even zucchini noodles. Be creative!

This is a great stove to table dinner! I love using my Le Creuset Braising Pan for this recipe! Then of course adding fresh Parmesan cheese with my Kitchen IQ grater!

I used dried herbs in this recipe because I always have them on hand. If you have fresh just chop and double the measurements.

I decided to make this delicious caramelized shallot meatloaf muffins as individual servings. This way I can freeze the leftovers and just take out one at a time to enjoy later. The combination of chicken sausage, spinach, artichokes with herbs and garlic make this an amazing pasta dish for lunch or dinner.

This pasta recipe is great for using up leftovers for a quick weeknight dinner! My kids always loved pasta bakes for dinner and so did the entire cheerleading team.. I miss those days..

Today I made an eggplant bake for a friend and had a few leftovers and thought I would use them up for my dinner. I took all of the ingredients, made 1/2 pound of pasta and dinner was ready in 25 minutes. My sauce had meat, peppers, onions, and mushrooms. You can also use leftover chicken, sausage or vegetables to create this easy yet delicious dish.
