Tonight for dinner I am making my Asian salmon with bok choy! Last night I made a roasted chicken so I thought I would also prepare a chicken soup using an Asian twist! I made my own stock and it was super easy using my pressure cooker but you can also use 8 cups of chicken broth!

I like using fresh roasted beets for this soup! You can puree the entire soup but I decided to leave some of the beets as chunks but for entertaining I would puree the entire pot and put into small bowls with a dollop of creme fraiche! Delicious and Refreshing. This soup can be served warm or at room temperature.

My husband and I were in Seattle recently for a friends birthday. We enjoyed going to Pike Market but our friends took us to their favorite places for Pho.  It was so yummy!  I know they let the bone broth cook all day but we really enjoyed my 30 minutes easy pho!  

I also used zucchini noodles and not the traditional rice noodles and we just loved the flavor and texture. It was a great meal for us!

With all of the garden vegetables my husband requested a gazpacho and OMG it was great to use what I had just picked from my friends garden.  We just love living at the lake during the summer and our friends came over to enjoy this with us.  

I do realize how lucky I am and try to show my gratitude every day!  We have a wonderful family and friends who truly love to be around us.

I did state it takes 25 minutes and that is the time to chop, put together and clean up.  The longer you let it sit in the refrigerator the better. Try to give it 2 hours to let the flavors combine.

All you need for this recipe are the ingredients (and add other fresh vegetables), a food processor and a bowl! Enjoy this Paleo Summer Soup!

Italian Vegetable Soup

It's very cold here in Massachusetts in December.  I love soup and so does my granddaughter Brooke.  No matter what time of the year it is wr love to make soup.

Since I keep many vegetables in the refrigerator, in the pantry and in the freezer.  Frozen vegetables are so handy.  Don't you get so mad when you buy fresh vegetables and you don't use them for a few days then when you grab them - they are bad!  I HATE wasting food and money.  That's why I keep vegetables I don't use everyday in the freezer.

Now I am not advertising for Bush's but I do love their chili starter beans.  You also use the juice in the can to add extra flavor to your soups or chilis.  If you use "regular" canned beans please drain and rinse before adding to your soups and chilis.

P.S.  Since I haven't been feeling good and sipping on green tea with fresh ginger and tumeric.  I decided to shred some tumeric into the soup as well.  #tumeric
