I need to thank Vinny from the meat department at Shop Rite, E. Hartford for the perfect pieces of pork shoulder fort his recipe and for my segment on Better Connecticut.  You are the best Vinny!  

I love making a simple pork shoulder and using it for several recipes!  I created this recipe for my Cook Once Meals or Week cooking segment for Better Connecticut.  

We are cooking this in the oven but you can use this same recipe in your slow cooker for 7-8 hours on medium.  

 

Chicken Cacciatore

Chicken Cacciatore

Letting this chicken recipes simmer in the slow cooker all day creates the most amazing meal. This Italian recipe is very popular and an easy recipe. Just add all of the ingredients in the slow cooker, set to low, off to work! Dinner is ready when you get home. Just pick up the Italian bread on your way home for dipping! Just omit the bread or pasta to make this a paleo recipe!

I use my crockpot all year long and it especially comes in handy in the summer. I can enjoy the lake and my company while the food is doing its thing. I keep several sizes handy and this dish goes great for any season! Give my crockpot meaty cabbage a try!

These are similar to my stuffed cabbage but different!  These are more about the meat and a lighter sauce.  They are however both Paleo recipes for you to enjoy....

Italian Filled Braciole

Braciole is a popular Italian dish. Using flank steak works the best as it becomes very tender after slow cooking all day.  You can roll the meat with your favorite filling.  I had frozen kale handy along with the other ingredients.  I picked up the flank steak at Joseph's Classic Market.

PS  If you don't have kitchen twine at home just ask your butcher! They will be more than happy to provide some for you.

I make this Italian pulled pork recipe often during the summer at our lake house. I can let it cook all day, shred the pork then keep warm until ready to serve.

Pulled pork is a great Paleo Diet recipe using my Italian ingredients. I like adding the hot sauce to give it a little extra kick!

I love Sunday dinners in the slow cooker.  My Nana always made a Sunday sauce and I just loved when we had Pork Roast.  We would add peas to the platter and pour lots of sauce over the pork. This dish is amazing and is perfect for meal prep during the week.  I love to serve with zucchini noodles or sauté a bunch of greens.  

Note: Because I used a large piece of pork I asked the butcher to tie with kitchen twine. It just kept the roast together and made it easier to take out of the slow cooker and put on a platter.  Then grab a tong and fork as it just falls apart!  Go ahead and use your fingers to taste it.. I did...

Italian Paleo OMG Ragù!  This was simply amazing.  We are at our lake house for the summer and our friends came over. I had a super busy day and while at the butcher deciding what to make the pork butt looked amazing.

I did serve this dish with a creamy polenta.  I am Italian!!  What can I say...  If you want to keep it Paleo then serve with sauté vegetables or sauté garlic spinach (I do that a lot).

Ultimate Short Rib Stew

My husband has something against beef stew and I don't eat a lot of beef.  However, this stew recipes is hearty, flavorful, delicious and Paleo!  This is also a great recipe to throw in the slow cooker before work and enjoy a great meal.  Package the rest up to enjoy during the week or freeze for another day!

Cindy's Tip: If you butcher has the longer short ribs; ask them to slice in half. They are easier to work with and fit in your dutch oven and to serve.
