Try my new easy grilled spicy shrimp has been a summer favorite and so easy with all of the entertaining we do at the lake house!  I even made some guacamole with a bunch of fresh avocados I had on the counter!  WOW what a hit...

At the lake we love to entertain but I love EASY! I also want to enjoy the water activities, sitting with my friends and family and just loving life. I want to make something that will dazzle my guests without a lot of fuss. I created this appetizer with leftover shrimp I had in the freezer, 2 avocados in the refrigerator and 1/2 jar of salsa that I just love!

 

Easy Grilled Tuna

Easy Grilled Tuna

This recipe is super easy and absolutely delicious. I topped the tuna with some of the puttanese I made and it was a perfect dinner!

Cindy’s little secret: I took the tuna and added the olive oil, salt and pepper (and some minced garlic) and slipped it into a sealed container and in the refrigerator for 3 hours then took out and let come to room temperature while the grill was heating.

Of course the fish came from City Fish, Wethersfield, CT which is the best seafood in Connecticut!

I love canning green beans and having them all season to enjoy. I wanted to test out a new recipe using Mom's Gourmet and this was a hit. The best part was it took me 30 minutes from the time I stepped into the kitchen until it was served to my husband!  Thanks to City Fish for the amazing fresh shrimp!

We have a local fish market near our lake house and he does keep a small selection of fresh fish he picks up each day.  Therefore I decided to go to the fish market first then plan out the rest of my meal.  

Believe it or not I am not (well was not) a fan of swordfish but for some reason it looked really fresh and gave me this inspiration for the meal I made for my husband.

This dish was super easy to make and amazing beyond belief!  Every bite my husband was taking he kept saying; "this is delicious".  He grilled the fish so a team effort made this a special dinner for us.

Note:  You will notice in the ingredients I am not giving the amount because I used it through different parts of the recipe.  I did list the amount during the directions.  Paleo delicious!  OMG yes..........

Kids just love honey/mustard and this recipe is perfect for a busy family as a weeknight dinner.  I served over a salad and it was perfect.  I will admit that while eating I was also dipping in Dijon Mustard and added it in my salad dressing.  So good...   

Italian Cerviche

Italian Cerviche

This is a great make ahead dish!  You can marinade the fish a day in advance.  Allow the fish to sit for 4 hours then drain.  The fish is now cooked.  Cover and refrigerate.  2 hours before you are ready to serve add the additional ingredients, toss together and enjoy with plantain chips or divide into decorative martini glasses or jars.

Garnish with fresh parsley.

I was at our local fish market City Fish, Wethersfield, CT picking up Salmon for dinner but the Haddock caught my attention.  Quickly I remembered about the abundance amount of basil in my herb garden and we just picked a couple of perfectly ripe tomatoes.  Dinner plans have changed.

This is also a great paleo recipe and of course Italian recipe!

This recipe is not only super simple but extremely delicious!  Give it a try…

When I decided to make a Romesco sauce with the red snapper it was a big hit for a little dinner party we hosted during the week.   This entire dish was very easy to prepare yet it looked as if I spent hours getting ready for the dinner!

This is a traditional Paella recipe with an Italian twist. I love creating unique recipes by adding several ingredients and spices to a traditional dish. This is a great “family” meal because you can place the pan right in the center of the table for everyone to serve themselves. Don’t forget to include fresh Italian bread to dip into the pan juices!

If you are in the Hartford area there is only one seafood store you need to visit. All of the fish in this recipe are courtesy of my friends at City Fish, Wethersfield, CT.

Of course I used D’Aprile San Marzano tomatoes from D&D Market – The best Italian Market in Connecticut!

Italian Sole Wrapped in Swiss Chard

I was at City Fish, Wethersfield, CT in Wethersfield, CT and sometimes it is so hard to decide what to get. I normally go there with a dish and fish in mind but after I start viewing all of the beautiful fresh fish sometimes the menu quickly changes.

I used sole for this dish but you can certainly select flounder, halibut or even haddock/cod. I happen to love sole and it cooks quickly and you can add your favorite flavors to make it extra special.

As an Italian you can imagine the delicious twist using my favorite San Marzano tomatoes from my friends at D&D Market.

This is also a one-pot meal and if you use a pretty baking dish you can even serve from the same pan! How nice is that!! Enjoy

Italian Stuffed Squid

Squid is very common in Italian cooking.  I am sure you probably slice them and grill but stuffing them really brings them to a new level.  These are great for entertaining!  At City Fish you can ask Telly for a frozen pound of them and you can just thaw over night and enjoy.

This is a quick way for a dinner or appetizer and using cooked shrimp!  I love getting my shrimp at City Fish and they always have cooked shrimp on hand.  You can always buy raw shrimp and make it yourself.  Either way this is a yummy recipe!

For the rice I am using cauliflower for a great Paleo meal!  If you are not paleo then go ahead and enjoy rice.

I am also using feta cheese in this recipe - feel free to omit!

Last minute I added capers and it really made this dish great.....

Lemon Butter Baked Tilapia Fillets

Are you trying to get your kids to eat seafood?  Try tilapia as its very mild and take on flavors.  You can serve with vegetables or over pasta.  Try my Paleo seafood recipes for your family.  

For a side I grated up summer squash and did a quick sauté with unsalted butter, fresh parsley, thyme, salt and pepper then squeezed a little lemon juice. Perfect!
