I love my protein drinks and I have been going back and forth from SFH Recovery and Bone Broth Protein and many times I add a 1/2 of each in my smoothies.  Today I wanted crepes (I love crepes) and these were amazing.  This recipe made 4 crepes and I ate them all....

I used 1/2 scoop of each but if you are just using 1 protein then use one full scoop! The coconut oil gives the crepes a great additional flavor.    Enjoy

I was at Wholefoods deciding what to prepare for my crossfit friends coming over for dinner. I know my number 1 entertaining tip is to never test a new recipe but these are my workout buddies and we are always trying new paleo recipes. I saw boneless beef chuck short ribs. They’re strips of meat cut from the chuck section without a lot of surface fat and not a bone in sight—rib. They looked good but I have never prepared these before.

Normally when I use chuck I cook in the crock pot for the entire day to make sure the meat is tender. I was a little nervous so when I got home I marinated the meat in olive oil, salt, pepper and Italian herbs I had in my pantry and 4 cloves of garlic chopped.

These meal came to me while I was walking around the produce department not knowing what to make for dinner and I spotted the Tomatillo on sale! Immediately braised chicken came to me and created this delicious recipe. I hope you try my Braised Chicken with Tomatillo Salsa and it follows the Paleo diet and is gluten free.

Braised Italian Chicken and Vegetables

I was at our local Whole Foods staring at the meat case poultry.  I decided to get 2 bone-in chicken breast, 2 bone-in chicken thighs and 2 hot chicken sausage (for some heat).  I grabbed a bunch of vegetables and got home and started to cook.  I really didn't  have a plan and this recipe was created.

Feel free to add more ingredients to feed a family. This is a perfect recipe for 2. 

I roasted some chopped red potatoes and added them into the pot before serving.  I knew my husband would wants some carbs in the dish.  Totally optional.

In Tuscan and Spanish cooking you will see the word sofrito in many recipes. Sofrito is the combination of tomatoes, onions, peppers, carrots, garlic and fresh herbs to create a sauce. I use a sofrito in many of my recipes and is a perfect way to enjoy this dish.

You can use some of the sauce and use over zucchini noodles or spaghetti squash. I love to grill vegetables and top with this sofrito.

Last minute I decided to chop up more fresh herbs and top with a gremolata. A gremolata is a herb (parsley) condiment that is chopped with fresh parsley, lemon zest, garlic which is traditionally accompanies braised veal but I love to add to braised short ribs and even chicken milanese.

There is a story to the creation of this recipe.  I always have a head of cauliflower in my refrigerator (I just love it) and on Thanksgiving my friend Donna brought broccoli for her niece and we forgot to steam it up for her!  

During my normal weekly clean up the refrigerator to see what I have left from the week I took the two  out along with a few scallions I had left over and created this dish.  Of course I added all of my favorite Italian herbs and was really happy with this dish!  

I did sprinkle some freshly grated parmesan cheese on top before serving but that's the Italian in me.  You can also add in some melting cheese in the mixture if you desire.  Maybe about 3/4 cup!

Traditionally a "budino" is made in a large mold, not little individual molds. It makes for more of a spectacular sight when it is served, but be careful when you turn it upside down to serve.

I was at the grocery store and found myself stopping at Buffalo Wing Sauce (I used an all natural) and immediately thought about making a Frittata. (I do that often). Immediately walking to the meat I just asked for a small double breast of boneless chicken. (Mine was actually .60).

I don't mind dairy therefore you will find gorgonzola as an ingredient. If you are following the Paleo diet then you can omit but this is a gluten-free breakfast. I also added 3 scallions because I can't have enough but you can add less.

You may notice that I make frittata's often. Yes - I do.. You can be extremely creative and best part everything is done in one pan. I like easy clean up. You can also make this in muffin tins - just use a parchment paper liner. They seem to work best! I am thinking about making these as "Buffalo Chicken Bites" the next time we entertain. How cute and delicious will these be for my friends! I will use my mini-muffin tins - I can't wait…. YUM…
