Basic Marinara

I normally double or triple this recipe and freeze them in individual containers. I try to make it basic then depending on the recipe I can add more flavors such as wines or chicken broth. When making a marinara/sauce remember that dried herbs hold their flavor and color when slow cooking. If you are using fresh herbs don’t add them in until you are finished with the cooking process and just before serving. If you have fresh tomatoes then use them starting with 3 pounds.

During the summer months we move up to our lake house and it is when I clean out my refrigerator and freezer. I found a 5 pound pork loin tenderloin and brought it to the lake and decided to use it. I wanted something easy so we can enjoy the lake but serve a fabulous dinner!

I always use pork shoulder and was nervous but went for it. This is what I did and everyone enjoyed.. It was so good. I even made a coleslaw with only 4 ingredients! check it out…

You can make the BBQ a paleo recipe by omitting the brown sugar!

I found this beautiful round zucchini at the Coventry Farmers Market and had to grab one!  I was home alone for dinner and made this perfect dinner for one!  You can buy more and double the recipe or cut in half and share but I enjoyed this Beef Stuffed Heirloom Round Zucchini all by myself.

I stuffed with ground sirloin but you can use your favorite ground meat or even keep it all vegetables and some sweet potatoes!  (I may try it that way next week)

We love our Big Green Egg and be sure to keep coming back as we will be posting new videos and recipes that we just know you will enjoy!

This recipe is super easy.  We have a chicken throne and it fills a 12 ounce beer. If you don't have one just use the beer can.  We also love all of the amazing seasonings from Moms Gourmet.

Tip:  We used an aluminum disposable pan to place the chicken throne on and chicken.  Great for a quick clean up!  Also, get a kitchen spray bottle with water, chicken broth or apple juice to baste.

I like using fresh roasted beets for this soup! You can puree the entire soup but I decided to leave some of the beets as chunks but for entertaining I would puree the entire pot and put into small bowls with a dollop of creme fraiche! Delicious and Refreshing. This soup can be served warm or at room temperature.

Best Paleo Sloppy Joes

At the lake during the summer it's easy to make a dish, get in the boat and head over to a friends house.  I get to have my granddaughter Brooke with me all summer so my dishes need to be kid approves.  

I decided to make sloppy joes then it was easy to wrap and just warm at our friends house.  These were a big hit and fed 5 adults and 6 kids.  There was about 2 tablespoons left in the pan!  

I love veal mixed with my meat as it really lightens up the texture and taste amazing.  You can also use pork or just all meat.  Of course, the kids just knew it was sloppy joes - They all loved it...  

My stomach does not do well with green bell peppers but you can certainly use them in this recipe.  I went for the red and yellow.  This is also a great dish to use your Cast Iron Pan!

These pork chops were simply amazing.  Using my Cast Iron pan was perfect for our dinner.  Get it really hot to sear the chops then the oven will do the rest.  I did let the pork chops marinade for a few hours in the refrigerator seasoned with salt, pepper, fresh rosemary and thyme from my garden then olive oil.  

I made these for 3 of us!  I used the Center Cut Pork Chop Loin but you can use any cut for this recipe.

My husband and I love serving pulled pork over the summer.  It's easy to prepare in advance and keep warm while we are enjoying time on the lake with friends and family.  

We love our Big Green Egg and we know this was the best pulled pork because there was not one single piece left over.  

I have a few ways that I make my pulled pork such as my 5 ingredient pulled pork or Italian pulled pork that I prepare in the slow cooker.  

Since my spice rack is filled with Simply Organics we decided to do a dry rub and let it sit overnight.  

Give this recipe a try and even my vinegar based barbecue sauce that goes perfect with my vinegar cole slaw.

In Florida we can get some amazing fresh fish.  While at the market I spotted Yellow Tail Snapper wild caught and local.  I had all of the other ingredients to make this amazing dinner for 2.  This is a great dinner if you are following the Paleo diet or a healthy Mediterranean diet

Note:  You don't have to buy blackened seasonings as I am sure all of the spices are at home in your cabinet.  

Julienne is a knife cut where you slice long strips and keep them all in the same length.

Stuffed meatballs are just delicious. I love these blue cheese meatballs with bechamel sauce. If you are strick on the paleo diet then omit the cheese and you can stuff these with avocado, roasted red peppers or any other of your favorite ingredients. The bechamel sauce is paleo except for the cheese! If you do omit the cheese then add about a 1/4 teaspoon of freshly grated nutmeg. These are great for paleo entertaining! Enjoy…
