Every morning I love watching the Today Show while drinking my coffee.  I normally watch the cooking segment (and critique them) and on this morning I was curious who Kevin Curry was from Fit Men Cook so I grab my cup of coffee and sat to watch his segment. 

I am Italian and Love the gym while currently I am doing a weight loss challenge at my gym called HEWFIT and this recipes inspired me to create this dish!

I don't miss the cheese at all!

On Sunday’s I normally go through the freezer, refrigerator and pantry. I have been doing this since my kids were little as I plan my meals for the week. I don’t plan for the week anymore it is more a day to day thing for my husband and I but going through everything we have handy is still a tradition.

Today I have sweet potatoes in the pantry. In the freezer I found eggplant that I have already grilled and saved. In the refrigerator I have 1 yellow pepper, 1/2 red pepper, onion, garlic and zucchini. I always have canned diced tomatoes and herbs so this was a great creation. I am really proud of myself and may not want to share this dish – I probably will..

This is what I did to create this amazing Paleo Recipe using a sweet potato crusted hearty vegetable turkey lasagna.

I love to use my Panderno  spiral vegetable slicer, when spiraling my potatoes into noodles.

My tip: When you saute or grill vegetables make extra and freeze to use later!

My disclaimer for this recipe! I am Italian and during the holidays especially I make everything BIG!  What if unexpected guests stop by!  What if family brings a friend!  What if I ran into someone at the grocery store and they are home alone for a holiday (that has really happened).  

These are some of the reasons there is always an extra dish waiting in the refrigerator on stand-by or when I make a dish - It's really BIG and LOADED with lots of good stuff.

Note!

  • You can make this really big lasagna and left overs are amazing!
  • You can cut ingredients in half to make an 8x10 size pan.
  • You can omit the ricotta, mozzarella, parmesan to make it dairy free
  • You can make the meat sauce, cut the recipe in half and freeze the remaining sauce for another time.

Even living in Florida we enjoy a lasagna on occasions.  I feel very fortunate that we have so many farmers markets and the vegetables are just perfect.  I thought a vegetable lasagna would be perfect.  

You can easily make your own tomato sauce and here is my recipe for you!

Lasagna is traditionally prepared in a rectangle baking pan.  I am preparing this vegetable lasagna in a 5 qt. brazing pan then slicing into wedges.  I thought this would be a lasagna look fancy!

Sunday’s I clean out my refrigerator and try to use up what I have before the new week starts.  I had several 1/2 used vegetables and a beautiful eggplant.  I decided to make a Vegetable loaded eggplant lasagna. Now that is a mouth full and of course it is made Italian style and a great paleo recipe!

Chefs Note: If you use gluten free or regular breadcrumbs with Italian seasonings then you can omit the parsley, basil and oregano – unless you want extra herbs). You can also use sweet potatoes or any other leftover vegetables in your refrigerator!

 

Zucchini Lasagna

Zucchini Lasagna

Lasagna is a family favorite and using fresh garden zucchini make this dish light and delicious for everyone to enjoy. This is a great gluten free recipe and perfect Italian dinner!

Use your mandolin to slice your zucchini or a sharp chefs knife.

Check out Chef’s Note below – I also made this recipe breaded for extra crunch. I also made this recipe using ground turkey and it was delicous.

You can also add sauté zucchini or other fresh garden vegetables into your meat sauce.
