Almond Flour

I use almond flour with many of my recipes but it is very costly. I want to experiment with a few inspirations for the holidays therefore decided to make my own almond flour. I had a huge bag that I purchased a while ago to make a nut crunch. I used my food processor but I bet you can do the same with a coffee grinder as well. My advice would be to pulse it because I fear if you over blend you will end up with almond butter.

It came out perfect so now off to cooking land!!

Paleo Hot Cocoa

I can't wait to see Brooke next weekend. I know we will be using Chocolate ALOT! She already asked me if we can do a cooking video while making a chocolate cake and I thought we would make hot cocoa too. I am going to test Paleo Marshmallows when she arrives. So much fun.. I can't believe she is going to be 7. I crack up when she sends me emails now. Love that little girl so much. Well - this hot cocoa will be made next weekend while we celebrate Christmas. I may for a treat whip up some cream just for Brooke! This will make 2 mugs of cocoa. Enjoy a Paleo recipe and keep warm!

As an Italian there is one ingredient that is used in almost all of my meals….. GARLC!! If the recipe calls for 1 clove – I add 2.. I just love the smell of garlic cooking and the flavors really enhance any recipe!

When I find big (elephant) heads of garlic (mostly in the summer months) I buy them in bulk and roast. I normally roast 3 or 4 at a time and use them all week long. There is one that I keep just for me to pick into and enjoy all by myself!

The Perfect Poached Egg

Poached eggs are my favorite for breakfast, over a burger or on a salad.

To me the perfect poach egg is when the white is not runny and the yolk just begins to harden a round the edges but when you cut into it you get that flowing yolk. (I love dipping the my bacon into the yolk)

The most popular way to serve a poached egg is over toast but there are so many other delicious ways. Such as, over salmon, bacon, salad, burger or with sliced avocado on a plate.

You don’t need to be afraid to prepare a poached eggs. Here is my method that works every time and I will also include a tip for you…
