"After hours" Steak, Peppers and Onions Frittata

This recipe goes back to the days when I would go dancing at The Black Brimmer in Manchester, NH and after we would go over to The Red Arrow and order a steak and cheese omelet!  It was so good!

I decided to create a Paleo version and call it "After hours" I added a full red pepper, yellow pepper and 2 thin slices of beef.  This was amazing!  I actually drizzles some sriracha over my piece...  YUMMY...

I love a country breakfast on the weekend or a lazy weekday and this andouille sausage and eggs stir fry brings back memories of my French grandfather. On Sunday mornings he would fry together what ever was left in the refrigerator and a pan of potatoes! The house smelled so good we all went running to the kitchen. Miss those amazing mornings but I hold on tight to the memories! I had the best grandparents and they brought so much love to our family and it started every morning in the kitchen!

The next time make them I am adding blueberries in the batter.

I love summer time at the lake because I get to spend it with my grandchildren.  I have Ty (4) all week and this morning he wanted waffles.  He love to cook with me so of course we made them homemade.  The best part for him are the eggs!  I decided to whisk the egg whites to make these waffles even more amazing.  

This batter made 4 perfect waffles in my waffle iron for my 2 sweeties!

Blueberry Protein Crepes

I love my protein drinks and I have been going back and forth from SFH Recovery and Bone Broth Protein and many times I add a 1/2 of each in my smoothies.  Today I wanted crepes (I love crepes) and these were amazing.  This recipe made 4 crepes and I ate them all....

I used 1/2 scoop of each but if you are just using 1 protein then use one full scoop! The coconut oil gives the crepes a great additional flavor.    Enjoy
