Banana Coffee Cake with a Crumble Topping

I always think banana bread when those bananas are nice a ripe on the counter.  Today I decided to make more of a breakfast cake in a 9 inch pan.  Slicing the bread with a side of fresh fruit was a  perfect weekend breakfast with our coffee as we sit outside enjoying the amazing Florida weather.

So this is what happened!  I am having a 50th birthday party this weekend and a full house staying over.  We only have 1 refrigerator and limited storage at our lake house so I try to use up everything available before more shopping.  I have 2 bananas and a few other ingredients that are going to make this bread then freezing until the weekend.  I have a feeling there may be a few hangovers around here so I may not been cooking a fancy breakfast!  However, being Italian there just has to be several options and an endless amount of food coming out of my kitchen!

I like to make this in mini-loaf pans. Leave one out and freeze the rest.

Easy Paleo Naan Bread

My husband and I just love Naan bread and he was eating way to much of the packaged bread so I decided to make a healthier version.  I love to dip my sauce with this bread as well as making a soft taco, pizza or I add a poached egg on top with some leftover veggies for breakfast.  The possibilities are endless!  I hope you enjoy my Paleo Naan Bread Recipe!

Cindy's Tip! When I am making this bread for a specific meal I add spices to give extra flavor so it doesn't taste too much like coconut.

  • Italian dishes I add garlic powder, basil and thyme
  • Indian dishes I add a little garlic powder and coriander
  • Mexican dishes I add taco seasonings
  • Chicken dishes I add garlic powder and what other dried seasonings I am adding to my dish
  • When I want a little heat - sprinkle a little cayenne pepper!  Goes great with chili!

I have been making this banana bread for many years. It is always moist and delicious and a great way to use up browning bananas! Sometimes I make loaves in mini-bread tins and freeze them individually. You can take them out when unexpected guests come over for a cup of coffee!

I make soup at my friends house as she hosted a ladies cooking class at her house. I wanted to make croutons but something a little different.  I decided to make these mini-muffin croutons and each person can crumble on top of the soup.  These were a big hit.

Note:  These are not a muffin consistency as you would consider a "muffin".  These are more of a crouton texture.  Great for a salad or soup!  You can also add some cheddar cheese, chopped jalapeño or even chopped scallions to the batter!

It's summer at the lake and it's all about the pulled pork sandwiches, hamburgers, etc and I don't want to buy white buns!  Please no...  I am going to try a few variations over the summer but since I have so much almond flour that is the main ingredient in this recipe.  Stay tuned for nut free paleo biscuits....

A great way to enjoy those ripe bananas!  Also makes the house smell amazing!

I whipped up unsalted butter and honey together and put in a small bowl.  Covered with clear wrap and refrigerated.  Let come to room temperature then spread over warm Paleo Banana Bread!  YUMMY    xo

When we were in Seattle last fall there was a cute breakfast place that had the best omelets.  I can't remember the name but they were also making fresh crumpets.  We didn't have one but they have been on my mind and I decided to see if I can make them paleo!  They came out pretty darn good.  I do have to say that they weren't great the next day.  I had stored them in a sealable baggie on the counter over night.  So maybe put them in the refrigerator or eat them right away.

I used a biscuit ring to create the perfect size crumpet!

OK friends!  I love Italian bread and knew I was making this bacon frittata to eat today!  I have other Paleo Rolls but wanted to make a loaf of bread and didn't have cashews.  This was a "let's see what I get" and OMG Paleo Italian Bread - I love you!!  

I added freshly grated parmesan cheese on the top before baking.  You can omit but I am glad and enjoyed every bite!

Yes I am Italian in a Paleo world! I love my Italian sandwiches with all fresh meats from D&D Market in Hartford!  My Nana and I would make these long sandwiches on the weekends and call them airplanes.  Never sure why she called it that but perhaps because she made enough to feed an airplane full of people!  That is a typical Italian – Always enough food..   I was thrilled to create this recipe and I hope you enjoy too!

These are the perfect Italian Rolls but you can form them any shape that works for you!

I made these for my pulled pork and brought them to Better Connecticut.  These were fantastic and everyone enjoyed them!  I of course, took a bite before packing them for the station!  

I used a muffin top tin and it worked great.  You can keep these as a muffin top or slice in half for a bun!  Either way - perfect..  Enjoy

I recently cooked for over 100 people at Sons and Daughters to benefit Place of Hope.  One on the dishes included my Tuscan Burgers from my Cookbook Paleo Italian Cooking.

I had ordered plenty of Spaghetti Squash from Mr. Greens and made these amazing sliders!

You can also make them full size to fit your burger.  Cooking them in coconut oil gave them extra flavor.

Chefs Note!  If the squash batter seems to have a lot of liquid just add in more tapioca flour. Just a tablespoon at a time!

Zucchini Soft Tortilla Shells

There are so many zucchini right now and I am loving it!  My friend Kathy sent me to her garden as she is traveling and I decided to make these with my dinner.  I grilled up a chicken breast I seasoned with salt, pepper and Italian seasonings then I sautéed up some sliced peppers and onions then cut up an avocado - Dinner for me!  YUM....

Add any of your favorite spices!  You know mine are Italian...  Next time I may add in a few shakes of red pepper flakes.  All I can say is Paleo OMG you are delicious!
