Smoked salmon omelet

Omelets are great because you can be so creative. You can use leftover vegetables from the night before or any meat you have on hand. You can make them with eggs or egg whites or how I do it – 1 egg and 2 liquid egg whites.

This is my version of lox and bagel without the bagel. I am not against a little cheese and we have enjoyed this both as an egg white or egg omelet. It has become a family favorite.

Spaghetti Squash Marinara Meatball Nests

During Blizzard Colbie I was home making a bunch of new recipes and after reviewing what I had in the freezer it was exciting to find a container of mini-meatballs and sauce that I made a few weeks ago. I always make extra meatballs and freeze some for later.  This came it very handy.

We were inviting some neighbors over and we all love spaghetti squash and since we were doing a buffet style dinner I decided to do individual servings of spaghetti squash with a mini-meatball nestled inside and it was a hit!  Our friends son Austin took the rest home!  I just love cooking for friends and family.  Make me so happy..  Not to mention we love having company and there were a few bottles of wine opened and the fire was going.  Then we all enjoyed watching our dogs playing in the snow!

I am thankful and grateful everyday for all of the wonderful people in our lives.

If you don't have any sauce handy you can make it fast and easy - recipe here!
