We just love our zucchini pasta at home.  I go every Sunday to our farmers market and stock up!  Today I even had some left over fresh spinach from the week and decided to add it in as well. You can omit but if you have spinach or any other left over veggies - Go ahead and add them in!  Enjoy

Lemons, Spinach, and Prawn Soup

The secret to making this creamy soup is that you must put a can of coconut milk in your refrigerator over night. When you open the can, the top will have the cream. Scoop it out and keep aside and use the water liquid for another recipe.

Lentil and Quinoa Cakes with Herb Dressing

This recipe was created by left over lentils and extra ingredients I had during meal planning for the week.  I thought it would be perfect for our Daniel Fast.

Here is the recipe for the Herb Marinade.

Chefs Tip:  If you are making lentils, quinoa or other grains and have left overs just put in a storage container then freeze.  You can pull them out when you want them again. That is what i did with the lentils.  They were left over from a few weeks ago and I pulled them out to use and this is what was created!

Note:  I used a large ice cream scoop to keep them the same size.

Enjoy xo

Lentil Soup

This is one of those easy soups you can serve within 1 hour with just a few handy ingredients!

I always keep my Dutch oven handy on the stove and filled with a warm soup is always very inviting and keeps you eating well.

Cindy's Tip!  Be sure to rinse your lentils out.  Just put in a colander to do this and check to make sure the lentils look good.

Loaded Stuffed Peppers

Loaded Stuffed Peppers

I just love loaded stuffed peppers. You can be creative and stuff with your favorite meats and vegetables (I just love peas in most of my dishes). These freeze well and you can make a variety to please the picky eaters in your family! I like to serve with a variety of bell peppers but you can select your own!

These are a perfect paleo recipe when you are planning your meals for the week.

Did you know – you can even prepare these in the slow cooker..

Lobster Lettuce Wraps

My husband and I are really enjoying lettuce wraps and we truly enjoyed this for lunch while sitting on our deck at the lake!

This is a great way to use leftover lobster.  Of course all of the lobster for this recipe came from our friends at City Fish!
