Gluten free Italian stuffed meatball with a shiitake sauce

I am thrilled to be doing monthly demonstrations at Williams Sonoma and this is my November recipe.  I had to test it out at home first with friends and they were amazing.  We all just loved them and enjoying some of the shiitake sauce was amazing.  Of course I get to show off my favorite Le Creuset pans as well and it's so natural for me to talk about them to customers as they taste the food I demo for them.  My greatest joy is watching people take that first bite them look at me and smile.

Notes:  At D&D Market they make up a fresh batch of meatball/meatloaf mix every day.  It's the combination of pork, veal and beef.  It's easier for this recipe and making your meatballs.  I know sometimes it's hard to find ground veal at the local grocery stores!  Give it a try...

Gluten Free Lemon Curd

I have recently started to use lemon curd in my gluten free baking. This is not a paleo recipe as it does have sugar as an ingredient. There are so many Italian baking recipes to use this yummy mixture! It can be expensive at the stores and now that I can make it myself - I will be developing many Italian desserts from this lemon curd! Enjoy

Gnocchi is so easy to make and everyone gets so excited when you serve it to them.  I decided to make this as a side to my Pork Milanese dinner and it was a big hit.  I pan fried them after they boiled but you can omit this step but it's really good.

Granola

Granola

We all know that breakfast is the most important meal of the day, but we don’t always have time to make pancakes, bacon, or eggs during our busy weeks. My suggestion: make granola ahead of time and enjoy it when you are on the run, or add it to yogurt or fresh fruit.

Grated Zucchini with Shallot, Cubanelle in Butter and Thyme

I had some left over grated zucchini from another recipe and there are always shallots and cubanelle peppers in my refrigerator.  I have fresh thyme in my garden and decided to make this side dish.  I then topped it with an over easy egg and slices of fresh tomato.  I did drizzle extra virgin olive oil over it all before my first bite!  Delicious...

Greek Moussaka
  • Time: 1 hour 30 minutes

Greek Moussaka

Greek Moussaka is a great Paleo Recipe for a week night meal or Paleo Entertaining. If you know me then you know how much I love eggplant! Not everyone that follows Paleo uses parmesan cheese but as a true Italian I just can't go without it in certain dishes! You can certainly omit if you prefer. This is a great side dish but can also be the star of the plate and add a side salad. Either way - simply delicious! Enjoy

I love our farmers market here in Palm Beach Gardens.  Every Sunday I take the 2 mile ride and pick up all of my fresh vegetables, fruits and a jug of Kombucha.

This is an Italian favorite! When ever this salad was offered at any restaurant in Tuscany we would order to enjoy before dinner with a glass of red wine! We have noticed that many Italian restaurants here in the states are now offering a grilled calamari salad, with their own personal twist.

Grilled Calamari with Anchovy and Capers
  • Complexity: medium

Grilled Calamari with Anchovy and Capers

I was inspired to make this grilled calamari with anchovy and capers after my recent trip to Rome.  My husband and I enjoyed anchovy and capers from Tuscany to Rome and since we love fish I decided to create this perfect dish.  We enjoyed with company as a primi and all shared from the plate.  Of course, you can dip fresh bread in the sauce.

I used San Marzano tomatoes from my favorite Italian store Ingredients in Hartford, CT at D&D Market and the calamari came from my favorite fish market in Wethersfield, CT at City Fish, Wethersfield, CT.
