This is a perfect side with any dish or add as many vegetables you want to make it a meal.  You can either add your favorite flavor profile; Italian, Asian, Indian, Mexican, etc...   

I love to make a big batch and scoop out servings during the week. Just warm and enjoy (or eat cold)

In our modern age you can now find riced cauliflower in the freezer section and ready to go.  Or you can pick up a head of cauliflower and rice yourself.

I love that I can get riced cauliflower at Trader Joes in the freezer section. It takes minutes just to warm it up. If you don't have a store that carries it in your area just take a head of cauliflower and rice by sending it through the shredding disk from your food processor. To cook it add butter or coconut oil to a pan and once hot add in the cauliflower and cook for about 7 minutes.

We just love summer vegetables.  At our summer lake house we love to grill and entertain.  My husband and I just love salmon and my Cauliflower Rice Succotash was the perfect accompany for our dinner.  Everything was cooked on the grill and we ate outside.

I love cauliflower but wanted to make something different and decided to make soup! This is a great paleo recipe and Italian recipe to enjoy… I may add red pepper flakes next time to give it a little extra kick but the white truffle oil did make cauliflower soup really amazing…

My husband was in India a few months back and our friends sent him home with a suitcase full of spices.  I decided to make a dish with some of my favorite ingredients chickpeas and peas.  Traditionally this dish is not prepared with green peas but I love them so they were added and I loved every bite!  

I have to admit that these spices are not used often in my kitchen and the combination was a little hot " spicy hot" for me but I still enjoyed it very much.  I will defiantly make it again.

I also made a batch of my Paleo Naan Bread to dip in the sauce and what a super yummy dish!

Cheesey, Jalapeño and Bacon Cornbread

This recipe started because my girlfriend is making chili.  I thought making a cornbread would go great but I wanted to make it extra special and have plenty.  Plus I also looked at this way - I had all of the ingredients and had to purchase a quart of buttermilk so why not use it all now.  Any leftovers (which I doubt can be frozen and saved for another time).

As I was starring at my paella pan  from Le Creuset that is when it came to me!  This paella pan would make a great cornbread and look amazing too! I also love my OXO kitchen essentials.  I just couldn't imagine using anything else.  In this recipe I used mixing bowlmeasuring cupmeasuring spoons and oven mits!  I am a happy girl in the kitchen.

For our breakfast I made bacon and reserved 4 pieces so you can omit the bacon if you don't  have it handy but I always make extra "just in case" or Jake gets to enjoy it during the week.

This is what I did! Now remember this is for a large paella pan - If you are making in a standard cast iron pan or 8x8 baking dish then cut the ingredients in 1/2 except for the baking soda (use 1 tablespoon)

I love my one-pot Paleo comfort meals!  To make the spaghettis squash is so easy.  Just poke about 10-15 holes by using a metal skewer then roast.  I also use my Le Creuset Braising pan for so many great meals and it goes from the stove to the table!  How amazing is that??
