We have been on the go for all of December and tonight I felt like a comfort salmon dish.  I am starting HEWfit in a few weeks and decided salmon and pasta was a perfect dinner for us.  As an Italian pasta was always a frequent visitor but over the past several years it makes a rare appearance.  When we do eat pasta it's a small amount.  Tonight the salmon will be the star but it will be yummy for us to enjoy!  

Go ahead and give this recipe a try!  I bet it would also be great with spaghetti squash too.

I haven't made beans in so long and it seemed to be the perfect side for my BGE Sweet and Spicy Ribs.

Now that I know using canned beans and adding your own ingredients takes on a whole new meaning of baked beans not to mention all you need is 30 minutes.  I made these for my company and never let them know they were semi-homemade and everyone just loved them.  

I used 2 tablespoons of the rub I made with the Ribs.  If you are not making the ribs then here is an easy recipe for the spices.

Ingredients for Spices!

  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

I have been making so many Greek salads for Brooke and I this summer.  My granddaughter loves salads, vegetables and chicken.  

My future daughter-in-law was over this past weekend with the kids and I knew she would enjoy falalfels with me in a pita pocket filled with a Greek salad then drizzled with EVOO.  YUMMY!

Cindy's Tip!  Keep dried seasonings handy.  Fresh herbs are easy to keep all year. Outside during the summer and bring inside and set near a sunny window for fresh herbs in the winter too!

My husband was out doing errands on found a farmers market and came home with eggplant.  I love eggplant.  I decided to cook them up francaise style and I made sandwiches with fresh french bread and sliced mozzarella cheese.  Then pressed on as a panini.  Delicious!

I can just eat by drizzling a little EVOO and some fresh basil!  Perfecto....

When I was at Stop and Shop looking around for an appetizer for our lake friends the block of Feta cheese stood out!  The Boar's head was on sale and was I glad as it made this appetizer perfect! I will be making this over and over again this summer!

Tidbits about Filet mignon:   This most tender, lean, succulent yet elegant meat is from the small end of the tenderloin area of the animal, which is non-weight bearing and not toughened by daily exercise, resulting in extremely tender meat. The name is French for “cute filet” with “filet” meaning thick, boneless slice and mignon meaning “dainty.” ... French: tournedos, filet de bœuf.
 
No matter if I am grilling or sautéing this beautiful cut of beef; I always take it off between 135-140 degrees F.  That is a medium-rare temperature but remember it will continue to cook while it is resting.  Your family or guests may say, "I like my meat medium"  Do NOT over cook this meat.  I am not a rare beef eater but this tender meat is so delicate that you don't want to overcook.

Flax" vegan" Eggs

As I am preparing for Daniel Fast it was necessary to come up with another way to use "eggs" in my recipes.  Especially for binding.  I was told by a Vegan baker that she uses Flax seeds.  I tested it out and yes......  Works perfect.

Here are a few tips from my stumbles.  I will be adding this recipe link to keep it handy on multiple recipes for the Daniel fast and any Vegetarian recipes.

Tips:  Get a coffee grinder (about $9.99 or go to a thrift shop for $2)  You will use this every time you make your Flax eggs.  

Buy raw whole flax seeds and grind them fresh each time. Keep flax seeds in the refrigerator or freezer for storage.  

You may find there is a "nutty" taste but I think it's very subtle and have begun to enjoy the taste.

This recipe is per 1 egg.  If you need to use 2 eggs just double, 3 eggs just triple, you get it now......

Fresh Pineapple Upside Down Cake

I bought a fresh pineapple along with other fresh fruit for the weekend. We never cut open the pineapple and I kept moving it around the kitchen and finally the pineapple became my centerpiece. After a couple of days I decided to make a Fresh Pineapple Upside Down Cake and this dessert was enjoyed by my lake neighbors.

You can use canned pineapple for this recipe but the fresh pineapple was amazing. There was extra pineapple so I chopped and added some in the mixture and enjoyed some for myself! The cook needs to eat too...

I used a 9x9 metal pan. My initial thought was to prepare this in a cast iron pan but mine is at home in Connecticut and I am baking this at our lake house. I do plan on making this again using my cast iron pan.
