I love my series on Better Connecticut, WFSB “Cook Once Meals all Week”  Today (May 28, 2014) we featured eggs and cooked with host Scot Haney and Kara Sundlun. Eggs are not just for breakfast!  We can enjoy them through out the day and can be prepared in advance for many recipes.

I prepared chicken and Sweet Potato Hash with Poached Eggs. The chicken and hash can be prepared in advance and when you get home from work just heat it up and make a well for your poached eggs.  How easy is that.  Dinner can be ready in just 15 minutes. I also shared my delicious Lettuce Cups with Smoked Salmon with Scot just loved….  Makes me so happy… For another great make ahead recipe I had had my egg muffins available which were amazing!.

These can be made in advance, frozen and quickly warmed in the microwave for a quick and healthy breakfast on-the-go. The best part of these are you can add anything you have handy such as; leftover sausages, sautéed vegetables, spinach or your favorite filling!  Here is the recipe for these yummy egg muffins!
