After the past 5 years learning more and more about the Paleo diet and sharing my recipes, entertaining tips and more I am so excited about this new cookbook.  As an Italian growing up in my Nana's kitchen it brought back the wonderful and happy memories as I was inspired to create these recipes.  Except for the pasta and bread my Nana and Grandfather prepared healthy meals for us.  My grandfather had a garden in our yard that covered 3 acres of land and would be out there each day picking fresh vegetables and fruit for our meals.

My Nana never drove therefore my grandfather would take us to all of the markets each Saturday to buy our groceries.  We would go to the butcher for meats, a few bakeries and other speciality stores. We only went to the big box grocery stores for staples.  To this day I still shop by visiting our local markets such as D&D Market, City Fish and DiFiore.  I then go to Shop Rite to gather everything else.  It's really the best way to shop!

I take a lot of pride when sharing recipes with you.  My love for cooking starting when I was very young.  I loved my Nana so much and always wanted to be near her and she loved being in the kitchen.  I would do anything to be in the kitchen with her and she loved our time together as well.  I also remember sitting on her bed just chatting. We could talk about anything and everything.  Her love and kindness was infectious and I wanted to be just like her!  Even being 50 years old I miss her dearly everyday.  Feeling blessed that I had a great career for over 20 years as I owned a software training and recruiting company and raised two amazing children.  I was that mom that had all of the cheerleaders over our house preparing for Sunday games or competition.  My door was always opened for friends and neighbors to come over and join us for dinner.  From being on the board of my sons soccer organization to volunteering at their school our live was busy but full of love and memories and I did it all as a single mother.

12 years ago I met the love of my life and he has been there as I moved from our home to be with him.  My kids grew up and moved on and my life changed.  It was a lot all at once and it was really hard to cope.  From running a business, being head of household as a single mother and being involved in my kids activities to a new home in a state where I did not know a soul.  I actually became sad!  What did I do to change things.....  As I started meeting new people at yoga or the gym I started inviting them over for lunch then dinner.  I did what my Nana taught me..  I started cooking and having new friends at my table!  From there it inspired me to start my blog and now here i am with my second cookbook sharing my love for the kitchen.  To  me cooking is relaxing and a way to share the table with friends and family.  

Being a grandmother now is the most rewarding opportunity in the world.  I am creating memories and it makes me so happy when Brooke and I are in the kitchen together being silly and having fun.  When we are together my husband tells me that it is the Brooke and Nini show.  There is nobody else around but us!  I believe my Nana felt the same way too.  I am so happy together when Brooke and I are together.  She is the best traveler, we always get manicures and pedicures together but most of all we love cooking and setting the table for our family and watching everyone eat the food we prepared.  I love looking over at her and notice we are doing the same thing......  Looking at the expressions at the table.  How lucky and blessed am I do have the relationship with my granddaughter that I had with my Nana. You can believe I am treasuring every moment and hope to be creating memories that will last both of us a life time.

Being older I now see how being surrounded by family from the laughter, kids running around, dogs in and out of the house, a constant flow of food and drinks, and all of us at the table together.  I have my two children, two step children, 3 grandchildren and one on the way along with my amazing husband and my wonderful dog Jake.  I am the short order cook and even though you may hear me complaining about it - I wouldn't want it any other way!  Knowing you are blessed is when you look around and appreciate everyone around you and smile while being thankful.
