I love keeping frozen vegetables handy in the refrigerator.  We were invited to a friends house and came up with these to bring.  I had all of the ingredients.  Enjoy!

PS - I made these, packed them up and they vanished.  I totally forgot to take a photo of the finished balls.  New time...

Coconut Crusted Cream Pie

I love custard and coconut with a little chocolate so this recipe was created.  I was just in my kitchen looking in the cabinet and this is what happened.  So good..  However, I ate the left over custard that was in the pan before dinner.  Needless to say I didn't eat my dinner :)

Easy Blackened Pan Seared Red Snapper

Seriously! This is the easiest blackened pan seared snapper you will ever make.  This is also amazing.  I served it with haricots vert topped with fried shallots.  I will share that now.

Take a sauté pan over medium heat.  Add in 2-3 tablespoons of oil.  Once the oil is very hot (how do you know it's very hot did you ask?  Great questions - when the oil starts to move to the side of the pan)  Toss in thinly sliced shallots and cook until crispy.  Remove from pan.  Keep oil in the pan.  When ready to make the haricots vert add them to the hot pan with some garlic, salt and pepper.  Cook until tender, remove from pan and top with shallots.  

Next tip! Did you know most seafood departments will provide the seasonings.  Yes, that is true.  We got this snapper at Whole Foods and they seasoned for us.  How easy was that...

We were grilling up steak on the Big Green Egg and I decided to grill these shrimp for my salad.  The smoke flavor really made this salad more amazing!

Italian Filled Braciole

Italian Filled Braciole

Braciole is a popular Italian dish. Using flank steak works the best as it becomes very tender after slow cooking all day.  You can roll the meat with your favorite filling.  I had frozen kale handy along with the other ingredients.  I picked up the flank steak at Joseph's Classic Market.  

Enjoy this Italian specialty!  

PS  If you don't have kitchen twine at home just ask your butcher! They will be more than happy to provide some for you.

I have a few Stuffed Cabbage recipes and links are provided below.  This recipe was inspired by the lonely cabbage left on the shelf at the farmers market, ground turkey I already had in my freezer and the 2 cups I reserved from this recipe.

When I make a baked dish like this I always take a moment to decide how I want to serve it.  I just love my Emile Henry baking pans.  They are great from oven to table!  Just wanted you to know that!  xo

Chicken Cordon Bleu is a thin breaded cutlet with ham and cheese rolled inside.  I love this dish because it's perfect for 2 or 6 or 8.  You can get these prepped in advance, store in the refrigerator and when you are 35 minutes to eat just bake and serve.

Spicy "Riced" Sweetheart Egg Bites

I have been over indulging in vegetables and just love it.  I had 1 head of both cauliflower and broccoli and wanted to use them up.  I decided to rice both of them in my food processor and create 2 recipes.  One is for these little spicy sweetheart bites for Valentine's Day and the other I am going to use in my stuffed cabbage. The recipe will be similar to this recipe except I am using ground ground turkey and the riced cauliflower/broccoli and not the zucchini.

I made these in mini-muffin tins.  I sprayed with coconut oil spray I found at Trader Joes
