"Yaki" Beef Stir Fry

I received a shipment of samples from Bone Suckin' and decided to use the Yaki first for a stir fry.  We were over the top happy with this Yaki "Teriyaki" and I am serious. This is the best we have ever had and it's gluten free.  

I did make 1 chicken breast for me as I am not a big steak fan!  Enjoy xo

I know - I know - I am Italian.  However, we have Labanese friends and they would bring over pita bread, grape leaves and kibbeh.  So good!  I remember how my Nana's friend could take a large pieces of pita and rip it in 1/2 the long way so each person got one half of a large pita and made us an amazing sandwich.  Sometimes I wish i was that little girl in at my Nana's house!

I love lamb and that is the traditional way to make kibbeh but not everyone enjoys it so I decided to make it with beef and will put out a large platter to serve the kibbeh by adding grape leaves, hummus, tabouleh,  lettuce, cucumbers, feta cheese, olives and extra-virgin olive oil.

Basic Marinara

Basic Marinara

I normally double or triple this recipe and freeze them in individual containers. I try to make it basic then depending on the recipe I can add more flavors such as wines or chicken broth. When making a marinara/sauce remember that dried herbs hold their flavor and color when slow cooking. If you are using fresh herbs don’t add them in until you are finished with the cooking process and just before serving. If you have fresh tomatoes then use them starting with 3 pounds.

Best Paleo Sloppy Joes

At the lake during the summer it's easy to make a dish, get in the boat and head over to a friends house.  I get to have my granddaughter Brooke with me all summer so my dishes need to be kid approves.  

I decided to make sloppy joes then it was easy to wrap and just warm at our friends house.  These were a big hit and fed 5 adults and 6 kids.  There was about 2 tablespoons left in the pan!  

I love veal mixed with my meat as it really lightens up the texture and taste amazing.  You can also use pork or just all meat.  Of course, the kids just knew it was sloppy joes - They all loved it...  

My stomach does not do well with green bell peppers but you can certainly use them in this recipe.  I went for the red and yellow.  This is also a great dish to use your Cast Iron Pan!

Best Pan Seared Pork Chops

These pork chops were simply amazing.  Using my Cast Iron pan was perfect for our dinner.  Get it really hot to sear the chops then the oven will do the rest.  I did let the pork chops marinade for a few hours in the refrigerator seasoned with salt, pepper, fresh rosemary and thyme from my garden then olive oil.  

I made these for 3 of us!  I used the Center Cut Pork Chop Loin but you can use any cut for this recipe.

We just love summer vegetables.  At our summer lake house we love to grill and entertain.  My husband and I just love salmon and my Cauliflower Rice Succotash was the perfect accompany for our dinner.  Everything was cooked on the grill and we ate outside.

Cindy's Tip:  I made this dish for 4 of us.  While at my local seafood market I asked the owner to slice 4 (1/2 pound) pieces for me.  I decided to keep the skin on but if you prefer it off they will be more than willing to do that for you as well.  Just ask with a smile :)

Cindy's Note:  I made this dish on the grill.  You can also prepare in your own kitchen stove top. Feel free to boil the corn.

Don't you just love fresh herbs in the summer.  We have pots of herbs along our walk way and it smells amazing.  At the lake we do a lot of entertaining and making my Fresh Herb Chimichurri Chicken Kabobs are always a hit!  

I like to marinade the prepared kabobs in the refrigerator for several hours.  Then save some of the pesto to serve along side the kabobs.  Delicious!

Cindy's Tip!  If using wooden sticks be sure to soak in water for at least 30 minutes before preparing the kabobs. That will prevent the sticks from burning while grilling!

I am really enjoying creating bowl recipes!  It's fun enjoying all of the flavors together.  Not to mention we just love meatballs in our family.  I hope you love this recipe!

Cindy's Note:  You can use spaghetti squash, rice noodles or even zucchini noodles.  I used linguini just because but also made it again and used spaghetti squash.  Very yummy!!!  

Spaghetti Squash - After I baked the squash and removed the strands then put in a bowl.  I added fresh ginger, salt pepper and chopped cilantro then drizzled a little sesame oil!  Amazing....

Sorry I took the picture before we garnished and ate!  We just couldn't wait.....

We only eat corn late summer when it's tender and sweet.  At the lake house we entertain often and preparing this dish in advance was a great way to feed a crowd while enjoying local summer corn!  We loved the spice from poblano and jalapenô peppers!  

Go ahead and give this a try.  If you can't find local fresh corn then use frozen corn.  (I actually added a frozen bag of white sweet corn as 4 extra friends were coming over and I was afraid there would not be enough).

Living at the lake for the summer making potato salad or macaroni salad are served most often.  You can feed a crowd on these sides.  I decided to grill the potatoes and not boil as we normally do.  This potato had a nice smoky flavor and really added great texture to this salad.  I add celery and carrots for some extra crunch and freshness.

This was a great salad and hope you enjoy as well.

Adding a spicy fried egg to a rib eye just adds another great texture and amazing flavor.  It’s almost a way to show off your creative side of cooking!

As I continue my turmeric journey this recipe came to me as my husband requested Brick Chicken for dinner.  I used my cast iron pan to keep the turmeric spices in my chicken.  

I served with a turmeric mushroom gravy.  So easy!

In a sauté I added about 1 tablespoon of butter.  When melted I tossed in an 8 ounce package of sliced bella mushrooms.   Cooked for about 5 minutes.  Sprinkled a little arrowroot powder over the mushrooms.  

Added turmeric powder, cumin, garlic powder, ginger power, salt and pepper  Then poured about 1 1/2 cup of vegetable broth (you can use chicken) and let simmer for 7-8 minutes.  

Yummy!

Cindy's Note:  Your butcher will be more than happy to cut your whole chicken in 1/2 for you!  Just ask with a smile.

In the fall comfort foods seems to make everyone happy!  I love to serve this in an individual bowl for everyone to sit and enjoy each bite!   The ground chicken goes so well with the acorn squash.  You can use ground turkey, beef or pork and still make this meal amazing!

Braciole is a popular Italian dish. Using flank steak works the best as it becomes very tender after slow cooking all day.  You can roll the meat with your favorite filling.  I had frozen kale handy along with the other ingredients.  I picked up the flank steak at Joseph's Classic Market.

PS  If you don't have kitchen twine at home just ask your butcher! They will be more than happy to provide some for you.

When I decided to make a Romesco sauce with the red snapper it was a big hit for a little dinner party we hosted during the week.   This entire dish was very easy to prepare yet it looked as if I spent hours getting ready for the dinner!

During the summer we love grilling and we have the best butcher near us.  ED Stearns Meats has everything we need for the summer.  Some of their meats are frozen but you can just call them and they will take them out and have them ready for you.  Also, the butcher will cut your favorite slices of meat right in front of you!

I was at Stearns getting veal chops, pork butt and decided to grab some Lamb Shanks to make this delicious bolognese.  Give it a try!  Very yummy...  I served with roasted cauliflower but you can serve with pasta, polenta or just eat out of bowl and dip your bread!  Enjoy...
